Last week I had something new for lunch, hibiscus leaves. I didn’t know you could even eat them. They were OK. I think I would have liked them a lot more if okra wasn’t involved. I am not a fan of the sliminess of okra.
What we have here from left to right is : greens cooked with tomato and onion, a piece of fried chicken (not breaded, just fried), eggplant cooked with tomato and onion, and hibiscus leaves with ground nut and okra. The white stuff is n’shima. I love the eggplant dish. If I had my way at lunch, I’d just eat the eggplant.
I kind of love lunch at work (in Zambia). Violet, the kitchen master, is a wonderful cook. The relishes (any side dish without meat) are so good which is amazing since she uses no spices – just salt. I also really like that almost everyone eats together and is friendly despite any office politics. Doesn’t matter if you are the Country Director, the driver or the receptionist – you all eat together at the same kitchen table. I don’t know why I am surprised, kitchens are always a place of warm and comfort. I’m going to miss lunching in the kitchen when I go back.
